Harvest honey only when its moisture content is below 18.6%, the threshold above which naturally present osmophilic yeasts can activate and cause fermentation. Wait until bees have fully capped at least 80% of the comb cells before pulling frames, as capping indicates sufficient dehydration.
Why It Works
Yeasts cannot reproduce in honey with moisture below 18.6%. By harvesting only well-capped frames, you ensure the bees have reduced the nectar's water content through evaporation and enzymatic processing to a shelf-stable level.
Tips
- Use a refractometer to measure moisture content before extracting; readings above 18% warrant further drying
- If moisture is borderline, place capped frames in a warm (30-35°C), dehumidified room for 24-48 hours before extraction
- Avoid harvesting during or immediately after rainy periods when ambient humidity is high
- Uncapped cells around the frame edges can raise overall moisture; consider trimming or excluding partially capped frames
