Prepare only as much syrup as your colonies will consume within 2-3 days, replacing it before fermentation can begin. In hot weather (above 27°C / 80°F), check feeders daily and discard any syrup that smells sour or looks cloudy.
Why It Works
Fermentation requires time for wild yeast and bacteria to multiply. Fresh syrup at a 2:1 sugar-to-water ratio has low enough water activity to resist microbial growth for several days. Thin syrup (1:1) ferments faster due to higher moisture content, so use thick syrup in warm conditions.
Tips
- Match batch size to consumption rate -- a single-deep colony typically takes 1-2 liters per day during buildup
- Use white granulated cane or beet sugar only; raw sugar, brown sugar, and molasses contain impurities that accelerate fermentation
- Dissolve sugar in hot (not boiling) water and let it cool completely before filling feeders
