Chill milk rapidly after collection

Filter the milk immediately after milking and chill it rapidly to below 40°F (4°C) within two hours.

Explanation

Rapid chilling slows bacterial growth significantly. Filter milk through a clean, single-use milk filter into clean, sanitized containers (glass jars are common). Place containers in an ice bath or refrigerator immediately.

Notes

Do not mix warm, fresh milk with already chilled milk.
