Steamed eggs — the most consistent boiled-egg method

Ingredients
  • 6 large eggs
  • water (1 inch in pot)
  • ice (for ice bath)

Steaming produces the most predictable boiled eggs because steam temperature is constant no matter how many eggs are in the basket. Shells also release cleaner than from boiling water.

Instructions

  1. Set up steamer: Add 1 inch of water to a pot. Place a steamer basket or metal colander inside.
  2. Preheat: Bring the water to a rolling boil.
  3. Add eggs: Place eggs in the basket in a single layer. Cover with a tight lid.
  4. Steam: 6 min (soft), 10 min (medium), or 13 min (hard).
  5. Ice bath: Transfer immediately to a bowl of ice water for 5 min.
  6. Peel: Crack and peel under running cold water.

Tips

  • Works with eggs straight from the fridge — no need to bring to room temp first.
  • Steam as many eggs as fit in one layer; timing does not change.
  • If you lack a steamer basket, a metal colander or pasta insert fits most pots.
  • Consistently easier to peel than boiled eggs — the steam gently loosens the inner membrane.
