Make fried rice with any leftover vegetables and protein

Day-old rice is actually ideal for fried rice. Heat oil in a wok or large skillet over high heat. Add diced leftover vegetables, then leftover protein (cut small), then the cold rice. Push rice to one side, scramble an egg in the empty space, then mix everything together. Season with soy sauce and sesame oil.
Why It Works
Fried rice was invented as a leftover vehicle. Cold rice fries better than fresh because it has dried out slightly, producing distinct, non-mushy grains. Virtually any combination of vegetables and protein works.
Tips
- The key is very high heat and not overcrowding the pan
- Day-old rice from the fridge is perfect — fresh rice will be mushy
- Add soy sauce around the edges of the pan, not directly on the rice, for better flavor distribution
- Finish with a drizzle of sesame oil and sliced green onions
