Follow the basic sauerkraut method but mix in additional ingredients after salting and massaging. Popular combinations: caraway seeds (classic German), garlic and dill (Eastern European), jalapeño and cumin (Southwestern), turmeric and ginger (anti-inflammatory), or shredded carrots and ginger (Asian-inspired).

Why It Works

The fermentation process works identically with additions — salt and anaerobic conditions drive the fermentation regardless of what else is in the jar. Added vegetables and spices infuse the brine with complementary flavors as they ferment together.

  • Keep additions to about 25% of total volume — cabbage should still dominate for proper brine production
