Make a shallow incision along the belly midline from the pelvis to the ribcage base, cutting only through the abdominal wall without puncturing the intestines. Pull the viscera downward in one mass, severing the esophagus and windpipe at the top. Separate the liver, heart, and kidneys for consumption. Remove the bladder and any remaining tissue.
Why It Works
Removing the digestive tract quickly prevents gut bacteria from contaminating the meat. Rabbit intestines carry high bacterial loads that begin migrating into surrounding tissue within 30 minutes of death. A clean evisceration on a hanging carcass uses gravity to draw organs away from the body cavity, reducing accidental puncture risk.
Tips
- Pinch the abdominal wall upward before cutting to create space between blade and intestines
- Inspect the liver for white spots or discoloration indicating coccidiosis; discard the entire carcass if the liver shows widespread lesions
- Rinse the body cavity with cold clean water immediately after evisceration
