Strain milk immediately after collection through a disposable milk filter into a sanitized container. Submerge the sealed container in an ice-water bath to cool the milk below 40°F (4°C) within 30 minutes, then transfer to the refrigerator.
Why It Works
Straining removes hair, debris, and sediment that harbor bacteria. Rapid cooling below 40°F halts bacterial multiplication, preserving flavor and extending shelf life. Properly handled fresh goat milk stays good for 5-7 days refrigerated. Slow cooling is the primary cause of off-flavors in home-produced goat milk.
Tips
- Use glass mason jars for storage -- they sanitize easily and do not absorb odors like plastic
- Fill containers as full as possible to minimize air exposure, which accelerates flavor degradation
- Label each jar with the milking date and use oldest milk first
