Store honey in airtight, food-grade containers in a cool, dry environment to prevent moisture absorption that leads to fermentation. Honey is hygroscopic and will draw water from humid air if left exposed, raising its moisture content above the safe 18.6% threshold.

Why It Works

Sealed containers block ambient humidity from reaching the honey surface. Keeping storage temperatures between 10-20°C (50-68°F) further slows any residual yeast activity, as osmophilic yeasts become largely dormant below 11°C.

Tips

  • Use glass jars or food-grade plastic buckets with tight-sealing lids; avoid containers with loose or worn gaskets
  • Store in a location with relative humidity below 60%
  • Never return used utensils or wet spoons into honey containers, as this introduces both moisture and microorganisms
  • Keep containers out of direct sunlight, which degrades enzymes and can cause temperature fluctuations that promote condensation inside the container
