Crêpes
Ultra-thin, delicate French pancakes that can be served sweet (with fruit, chocolate, sugar) or savory (with cheese, ham, eggs, vegetables).
Yields: 10-12 (8-inch) crêpes Prep time: 10 minutes (+ resting time) Cook time: 20-25 minutes
Ingredients:
- 1 cup all-purpose flour
- 2 tbsp granulated sugar (for sweet crêpes, omit or reduce for savory)
- 1/4 tsp salt
- 3 large eggs
- 1 1/2 cups whole milk (or a mix of milk and water)
- 2 tbsp unsalted butter, melted, plus more for greasing the pan
- 1/2 tsp vanilla extract (for sweet crêpes, optional)
Instructions:
- Make the Batter: In a large bowl, whisk together flour, sugar (if using), and salt. In a separate medium bowl, whisk eggs and milk together.
- Gradually pour the wet ingredients into the dry ingredients, whisking constantly until smooth. A blender can also be used for a very smooth batter.
- Whisk in the melted butter and vanilla extract (if using).
- Rest the Batter: Cover the bowl and let the batter rest for at least 30 minutes at room temperature (or up to 2 hours in the refrigerator). This allows the flour to fully absorb the liquid, resulting in more tender crêpes.
- Cook the Crêpes: Heat an 8-inch crêpe pan or non-stick skillet over medium heat. Lightly grease the pan with melted butter.
- Once hot, pour about 1/4 cup of batter into the center of the pan. Immediately tilt and swirl the pan to spread the batter into a thin, even circle.
- Cook for about 1-2 minutes, until the edges start to lift and the bottom is lightly golden. Use a thin spatula to carefully loosen and flip the crêpe.
- Cook the second side for another 30-60 seconds, just until set.
- Slide the finished crêpe onto a plate. Repeat with the remaining batter, greasing the pan lightly as needed. Stack the cooked crêpes separated by layers of parchment or wax paper if not serving immediately.
- Serve: Fill and fold or roll the crêpes with your desired sweet or savory fillings.
