Schweineschnitzel (Pork Schnitzel)

Ingredients:
- 4 boneless pork chops (about 1/2 inch thick)
- 1 cup all-purpose flour

- 2 large eggs
- 1 tbsp milk
- 1 1/2 cups plain breadcrumbs (or panko for extra crispiness)
- Vegetable oil or lard for frying (about 1/2 inch deep)
- Lemon wedges (for serving)
- Fresh parsley, chopped (optional garnish)
Instructions:
- Place pork chops between two sheets of plastic wrap. Using a meat mallet or heavy pan, pound them evenly to about 1/4 inch thickness.
- Set up three shallow dishes:
- Dish 1: Combine flour, salt, and pepper.
- Dish 2: Whisk eggs and milk together.
- Dish 3: Place breadcrumbs.
- Dredge each pork cutlet first in the flour mixture, shaking off excess. Then dip completely into the egg mixture, letting excess drip off. Finally, press firmly into the breadcrumbs, ensuring a good coating on both sides.
- Heat oil or lard in a large, heavy skillet over medium-high heat until shimmering (about 350°F or 175°C).
- Carefully place 1 or 2 breaded cutlets into the hot oil (do not overcrowd). Fry for about 3-4 minutes per side, until golden brown, crispy, and cooked through. Adjust heat if browning too quickly.
- Remove schnitzel from the skillet using tongs and let drain briefly on a wire rack or paper towels.
- Repeat with remaining cutlets.
- Serve immediately, garnished with fresh parsley (if using) and lemon wedges for squeezing over the top.
