Schweineschnitzel (Pork Schnitzel)

Ingredients:

  • 4 boneless pork chops (about 1/2 inch thick)
  • 1 cup all-purpose flour

  • 2 large eggs
  • 1 tbsp milk
  • 1 1/2 cups plain breadcrumbs (or panko for extra crispiness)
  • Vegetable oil or lard for frying (about 1/2 inch deep)
  • Lemon wedges (for serving)
  • Fresh parsley, chopped (optional garnish)

Instructions:

  1. Place pork chops between two sheets of plastic wrap. Using a meat mallet or heavy pan, pound them evenly to about 1/4 inch thickness.
  2. Set up three shallow dishes:
  3. Dish 1: Combine flour, salt, and pepper.
  4. Dish 2: Whisk eggs and milk together.
  5. Dish 3: Place breadcrumbs.
  6. Dredge each pork cutlet first in the flour mixture, shaking off excess. Then dip completely into the egg mixture, letting excess drip off. Finally, press firmly into the breadcrumbs, ensuring a good coating on both sides.
  7. Heat oil or lard in a large, heavy skillet over medium-high heat until shimmering (about 350°F or 175°C).
  8. Carefully place 1 or 2 breaded cutlets into the hot oil (do not overcrowd). Fry for about 3-4 minutes per side, until golden brown, crispy, and cooked through. Adjust heat if browning too quickly.
  9. Remove schnitzel from the skillet using tongs and let drain briefly on a wire rack or paper towels.
  10. Repeat with remaining cutlets.
  11. Serve immediately, garnished with fresh parsley (if using) and lemon wedges for squeezing over the top.
