Classic Hamburger — Iconic ground beef patty on a toasted bun

Ingredients
- 1½ lb ground beef (80/20 blend recommended)
- Salt and freshly ground black pepper
- 4 hamburger buns
- 1 tbsp vegetable oil or butter (optional)
Toppings (choose your own)
- cheese slices (cheddar, American)
- lettuce, tomato slices, onion slices
- pickles
- ketchup, mustard, mayonnaise

Instructions
- Divide beef into 4 equal portions (6 oz each). Form into ¾-inch thick patties. Press a shallow indentation in the center with your thumb.
- Season both sides generously with salt and pepper just before cooking.
- Grill over medium-high heat 4-5 minutes per side for medium, or pan-fry in a hot skillet with oil 4-6 minutes per side. Add cheese during the last minute.
- Toast buns on the grill or skillet during the last minute.
- Assemble patties on bottom buns with your choice of toppings and condiments.
- Serve immediately.
Tips
- The 80/20 fat ratio is key — leaner beef makes dry, crumbly burgers
- Handle the meat as little as possible; overworking makes tough patties
- The thumb indentation prevents the burger from puffing into a dome
