Guacamole

Ingredients

  • 3 ripe avocados
  • 1 lime, juiced (or more to taste)
  • 1/2 small red onion, finely chopped
  • 1-2 Roma tomatoes, seeded and finely chopped
  • 1 jalapeño or serrano chili, minced (remove seeds for less heat)
  • 1/4 cup fresh cilantro, chopped
  • 1/2 tsp salt (or more to taste)
  • Optional: Pinch of cumin, minced garlic clove

Instructions

  1. Cut the avocados in half lengthwise, remove the pits, and scoop the flesh into a medium bowl.
  2. Mash the avocado gently with a fork, leaving some chunks for texture.
  3. Add the lime juice immediately and stir to combine (this helps prevent browning).
  4. Stir in the chopped red onion, tomato, minced chili, and chopped cilantro.
  5. Season with salt (and cumin/garlic if using). Stir gently until just combined.
  6. Taste and adjust seasonings if necessary (more lime juice, salt, or chili).
  7. Serve immediately with tortilla chips, or as a topping for tacos, fajitas, etc.

Why It's Special

Guacamole is a quintessential Mexican dip or condiment made from mashed avocados. Its beauty lies in its fresh, vibrant flavors and creamy texture, balanced by the acidity of lime, the sharpness of onion, the heat of chili, and the herbaceousness of cilantro. Originating with the Aztecs, it's now globally popular, symbolizing freshness and festive gatherings. Its simple preparation allows the quality of the ripe avocados to shine through.
