Deruny (Ukrainian Potato Pancakes)
Ingredients
- 4 large potatoes (starchy like Russet), peeled
- 1 small onion
- 1 large egg, lightly beaten
- 2-3 tablespoons all-purpose flour (or more if needed)
- Salt and freshly ground black pepper to taste
- Vegetable oil for frying
- Sour cream (Smetana) or applesauce for serving
Instructions
- Grate Potatoes & Onion: Finely grate the potatoes and onion using a box grater or food processor. Place grated mixture in a colander or cheesecloth and squeeze out as much excess liquid as possible. This is key for crispy deruny.
- Mix Batter: Transfer the squeezed potato-onion mixture to a bowl. Quickly stir in the beaten egg, flour, salt, and pepper. Mix just until combined; don't overmix. Work fast to prevent potatoes from browning excessively.
- Fry Deruny: Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot (shimmering), carefully drop spoonfuls (about 1/4 cup each) of the potato mixture into the skillet. Flatten slightly with the back of the spoon.
- Cook: Fry for 3-5 minutes per side, until golden brown and crispy. Do not overcrowd the pan; cook in batches.
- Drain & Serve: Remove cooked deruny with a slotted spatula and drain on paper towels. Serve immediately while hot and crispy, with generous amounts of sour cream or applesauce.
