Allow full bleed-out (2-3 minutes) before proceeding. Cervical dislocation is an alternative for experienced handlers but is difficult on geese due to their strong necks.

Severing both carotid arteries causes rapid loss of consciousness (within seconds), making this the most humane method recommended by poultry processing guidelines. Full bleed-out also improves meat quality by removing blood from the tissues.
