Wrap the goose tightly in plastic wrap, then in a layer of freezer paper or aluminum foil, pressing out all air. Alternatively, use a vacuum sealer for the best protection against freezer burn. Label each package with the date, weight, and contents. Store at 0°F (-18°C) or below.
Why It Works
Air exposure causes freezer burn, which dehydrates the surface and creates off-flavors. Double-wrapping or vacuum-sealing creates an effective moisture barrier. At 0°F, properly packaged whole goose maintains quality for 6-12 months, while giblets should be used within 3-4 months due to their higher fat oxidation rate.
Tips
- Vacuum-sealed birds take up less freezer space than bulky wrapping
- Freeze giblets in a separate small bag for easy access without thawing the whole bird
- Thaw frozen goose in the refrigerator (allow 24 hours per 5 lbs); never thaw at room temperature
