Even though air fryers are marketed as "oil-free," a light spray or brush of oil on food makes a dramatic difference in crispiness and browning. Use an oil sprayer with avocado oil or olive oil — just a thin, even coat on exposed surfaces.

Why It Works

Oil conducts heat more efficiently than air alone and promotes the Maillard reaction (browning). A light coat gives you the crispy, golden finish of deep frying with a fraction of the oil — typically 1-2 tsp instead of cups.

Tips

  • Buy a refillable oil mister ($8-15) rather than aerosol cooking sprays, which can damage nonstick coatings
  • Avocado oil has the highest smoke point (520°F) and is ideal for air frying
  • For breaded foods, spray oil over the breading before cooking for an even golden crust
  • Pat food dry before oiling — surface moisture prevents crisping
