Make water kefir for a dairy-free probiotic soda

Dissolve 1/4 cup sugar in 4 cups non-chlorinated water. Cool to room temperature and add 3 tablespoons of water kefir grains. Cover with a cloth, secure with a rubber band, and ferment 24-48 hours. Strain out the grains. The liquid is a mildly sweet, lightly fizzy probiotic drink.

Why It Works

Water kefir grains are a different culture from milk kefir grains. They feed on sugar dissolved in water, producing lactic acid, CO2, and a small amount of alcohol (typically under 1%). The result is a naturally carbonated, dairy-free probiotic beverage.

Tips

  • Use plain white sugar, raw sugar, or coconut sugar — avoid honey (antimicrobial properties can harm grains)
  • Add a slice of lemon and a dried fig to the first fermentation for mineral support
  • Do a second fermentation in a sealed bottle with fruit juice for more fizz and flavor (2-3 days)
  • Water kefir grains multiply quickly — share or compost the extras
