Designate a clean, outdoor or well-ventilated area with a hanging point at chest height, a washable work surface, water access, and separate containers for waste and edible parts. Set up all equipment before beginning dispatch so the process flows without interruption.

Why It Works

A pre-organized station minimizes time between dispatch and chilling, directly impacting meat safety and quality. Each minute at ambient temperatures above 4C allows bacterial counts to increase. Having knives, water, and containers within arm's reach eliminates leaving the carcass unattended, reducing contamination risk from insects or environmental debris.

Tips

  • Position the station near a water source and away from the rabbit housing area to reduce stress on remaining animals
  • Sanitize all surfaces and tools with dilute bleach solution (1 tablespoon per gallon of water) before and after each session
  • Keep a sharpening steel at the station; rabbit processing dulls edges quickly, and a sharp blade is both safer and more hygienic
