Warming honey before filtering

Gently warm honey to 95-100°F (35-38°C) before passing it through your strainer or filter to reduce viscosity and speed up filtration. Use a double boiler, warm water bath, or a purpose-built honey warming cabinet. Keep the temperature below 110°F (43°C) to preserve enzymes such as diastase and invertase, and to maintain flavor and color integrity.

Why It Works

Honey viscosity drops significantly with modest warming. At 95°F, honey flows roughly twice as fast as it does at room temperature (around 70°F), which means less time waiting at the strainer and less pressure on the filter mesh. This is especially helpful for thick, low-moisture honeys that would otherwise take hours to filter.

Tips

  • Use a kitchen thermometer to monitor temperature and avoid overheating
  • A water bath is the safest warming method because it distributes heat evenly
  • Never microwave honey for warming as it creates hot spots that degrade quality
  • Warm only the amount you plan to filter in one session to minimize repeated heating
