Skinning as an Alternative to Plucking
5
- Solution: Skin the quail instead of plucking, especially for beginners.
- Explanation: Quail skin is thin and tears easily, making plucking tedious. Skinning is much faster: make small cuts around the legs and neck, and pull the skin off like removing a jacket. The resulting carcass is skinless but ready for evisceration much quicker.
- Notes: If crispy skin is desired, plucking is necessary but requires scalding.
