When are turkeys ready for processing?
Knowing when your backyard turkeys have reached the ideal size and maturity for meat processing is important for maximizing yield and meat quality. Processing time depends heavily on the breed, diet, and desired carcass size. Processing too early yields less meat, while waiting too long can decrease feed efficiency.
- Assess Body Condition (Feel the Keel)4
Run your fingers along the turkey's keel (breastbone) to assess muscle coverage before scheduling processing. A bird ready for slaughter has a keel bone that is difficult to feel beneath thick, plump breast muscle. If the keel feels sharp or prominent, the bird needs more growing time.

- Broad Breasted Breeds (White, Bronze)5
Process Broad Breasted White or Bronze turkeys between 16 and 22 weeks of age. Hens typically reach 14-20 lbs live weight by 16-18 weeks, while toms reach 25-40 lbs by 18-22 weeks. These commercial breeds convert feed to muscle rapidly during this window, making it the optimal processing range.

- Heritage Breeds (Bourbon Red, Narragansett, Bronze, etc.)4
Process heritage turkey breeds between 24 and 28 weeks of age. Bourbon Reds, Narragansetts, Standard Bronze, and similar heritage varieties grow more slowly than commercial strains, with hens reaching 12-16 lbs and toms reaching 18-25 lbs live weight within this window.

- Target a Desired Weight3
Weigh turkeys weekly starting 2-3 weeks before expected processing age using a hanging scale or platform scale. Process each bird once it reaches your target live weight, keeping in mind that dressed carcass weight is approximately 70-75% of live weight.

- Consider Feed Efficiency3
Track weekly feed consumption against weight gain for each batch of turkeys. When the feed conversion ratio (pounds of feed per pound of gain) rises above 5:1, the bird is past peak efficiency and should be scheduled for processing. Record total feed consumed and body weight weekly to identify this…
