Hummus bi Tahini
Recipe & Instructions (US Units)
Ingredients:
- 1 (15-ounce) can chickpeas, rinsed and drained (reserve some liquid)
- 1/4 cup fresh lemon juice (about 1 large lemon)
- 1/4 cup well-stirred tahini
- 1-2 small garlic cloves, minced
- 2 tablespoons extra-virgin olive oil, plus more for serving
- 1/2 teaspoon ground cumin
- Salt to taste
- 2-4 tablespoons reserved chickpea liquid or ice water
- Paprika or Sumac for garnish (optional)
- Fresh parsley, chopped (optional)
Instructions:
- Combine tahini and lemon juice in a food processor. Process for 1 minute, scraping down sides.
- Add minced garlic, cumin, and a pinch of salt. Process for 30 seconds.
- Add half of the chickpeas and process for 1 minute.
- Add the remaining chickpeas and process until very smooth, 1-2 minutes.
- With the food processor running, slowly drizzle in the olive oil.
- The hummus might be thick. Add 2 tablespoons of the reserved chickpea liquid or ice water and process until the desired creamy consistency is reached. Add more liquid if needed, 1 tablespoon at a time.
- Taste for salt and adjust as needed.
- Serve drizzled with olive oil and garnished with paprika or sumac and parsley, if desired. Serve with pita bread or fresh vegetables.
