Hummus bi Tahini

Recipe & Instructions (US Units)

Ingredients:

  • 1 (15-ounce) can chickpeas, rinsed and drained (reserve some liquid)
  • 1/4 cup fresh lemon juice (about 1 large lemon)
  • 1/4 cup well-stirred tahini
  • 1-2 small garlic cloves, minced
  • 2 tablespoons extra-virgin olive oil, plus more for serving
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 2-4 tablespoons reserved chickpea liquid or ice water
  • Paprika or Sumac for garnish (optional)
  • Fresh parsley, chopped (optional)

Instructions:

  1. Combine tahini and lemon juice in a food processor. Process for 1 minute, scraping down sides.
  2. Add minced garlic, cumin, and a pinch of salt. Process for 30 seconds.
  3. Add half of the chickpeas and process for 1 minute.
  4. Add the remaining chickpeas and process until very smooth, 1-2 minutes.
  5. With the food processor running, slowly drizzle in the olive oil.
  6. The hummus might be thick. Add 2 tablespoons of the reserved chickpea liquid or ice water and process until the desired creamy consistency is reached. Add more liquid if needed, 1 tablespoon at a time.
  7. Taste for salt and adjust as needed.
  8. Serve drizzled with olive oil and garnished with paprika or sumac and parsley, if desired. Serve with pita bread or fresh vegetables.
