Ingredients:

For the Dough: * 2 cups all-purpose flour, plus more for dusting * 1 teaspoon instant yeast * 1 teaspoon sugar * 1/2 teaspoon salt * 3/4 cup warm water (approx. 105-115°F) * 2 tablespoons olive oil, plus more for bowl For the Za'atar Topping: * 1/4 cup Za'atar spice blend * 1/4 cup extra-virgin olive oil

Instructions:

  1. Make Dough: In a large bowl, whisk together flour, yeast, sugar, and salt. Make a well in the center.
  2. Add warm water and 2 tbsp olive oil to the well. Gradually mix wet ingredients into dry using a fork or your hands until a shaggy dough forms.
  3. Transfer dough to a lightly floured surface and knead for 5-7 minutes, until smooth and elastic. Add a little more flour if too sticky, or a drop of water if too dry.
  4. Lightly oil a clean bowl. Place dough in the bowl, turning to coat. Cover with plastic wrap or a damp cloth and let rise in a warm place for about 1 hour, or until doubled in size.
  5. Prepare Topping: While dough rises, mix the Za'atar spice blend and 1/4 cup olive oil in a small bowl to form a paste.
  6. Shape & Top: Preheat oven to 450°F (230°C). Punch down the risen dough and divide it into 4-6 equal pieces.
  7. On a lightly floured surface, roll out each piece into a thin circle (about 6-8 inches in diameter).
  8. Place dough circles on baking sheets lined with parchment paper or lightly oiled.
  9. Spread the Za'atar topping evenly over each circle, leaving a small border around the edge.
  10. Bake: Bake for 8-12 minutes, or until the edges are golden brown and the topping is fragrant. Watch carefully to prevent burning.
  11. Serve warm, often folded or cut into wedges.
