Tabbouleh
Recipe & Instructions (US Units)
Ingredients:
- 1/2 cup fine bulgur wheat (#1 grain size)
- 3 cups fresh flat-leaf parsley, finely chopped (about 3 large bunches)
- 1/2 cup fresh mint leaves, finely chopped
- 1/2 cup finely chopped yellow or white onion (or 1 cup green onions, white and green parts)
- 2 medium ripe tomatoes, finely diced
- 1/2 cup fresh lemon juice
- 1/2 cup extra-virgin olive oil
- Salt and freshly ground black pepper to taste
- Romaine lettuce leaves for serving (optional)
Instructions:
- Place the bulgur in a fine-mesh sieve and rinse under cold water. Drain well.
- Alternatively, place bulgur in a bowl and cover with cold water for 10-15 minutes until softened but still chewy. Drain thoroughly, pressing out excess water.
- In a large bowl, combine the chopped parsley, mint, onion, and tomatoes.
- Add the drained bulgur to the vegetable mixture.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Taste and adjust seasoning if necessary.
- Let the Tabbouleh sit for about 15-30 minutes for the flavors to meld before serving.
- Serve chilled or at room temperature, often scooped with romaine lettuce leaves.
