Store harvested microgreens in the fridge for up to 10 days

Harvested microgreens keep 5-10 days in the refrigerator when stored properly. The key is keeping them dry on the surface while maintaining humidity in the container — wet leaves rot fast, but dry air wilts them.

Steps

  1. Gently rinse harvested greens in cold water if needed (skip if growing medium was clean)
  2. Spin dry in a salad spinner or pat dry with paper towels
  3. Line a sealed container or zip-lock bag with a dry paper towel
  4. Place greens loosely on top — don't pack them tightly
  5. Store at 1-4°C (34-39°F) in the crisper drawer

Tips

  • Replace the paper towel if it gets damp after 2-3 days
  • Leaving greens uncut and alive in the tray is the best "storage" — harvest only what you need
  • Discard any greens that smell sour or look slimy
