Store harvested microgreens in the fridge for up to 10 days

Harvested microgreens keep 5-10 days in the refrigerator when stored properly. The key is keeping them dry on the surface while maintaining humidity in the container — wet leaves rot fast, but dry air wilts them.
Steps
- Gently rinse harvested greens in cold water if needed (skip if growing medium was clean)
- Spin dry in a salad spinner or pat dry with paper towels
- Line a sealed container or zip-lock bag with a dry paper towel
- Place greens loosely on top — don't pack them tightly
- Store at 1-4°C (34-39°F) in the crisper drawer
Tips
- Replace the paper towel if it gets damp after 2-3 days
- Leaving greens uncut and alive in the tray is the best "storage" — harvest only what you need
- Discard any greens that smell sour or look slimy
