Know which microgreens regrow and which don't

Most microgreens are one-and-done — they will not regrow after cutting because you've removed the only growing point. However, a few varieties can produce a second (smaller) harvest, making them worth keeping after the first cut.

Varieties That Regrow

  • Pea shoots — reliable second cut, sometimes a third
  • Wheatgrass — regrows 2-3 times before quality drops
  • Lentils — modest second harvest possible
  • Fenugreek — can regrow once

Varieties That Don't Regrow

  • Radish, broccoli, sunflower, mustard, kale, beet, and most brassicas

Tips

  • Second harvests are always smaller and take longer than the first
  • After final harvest, compost the spent growing medium and root mat
  • It's more efficient to start a fresh tray than to nurse a weak regrowth
